What is enough?

I have been keeping my ears open and just letting comments and other people’s conversations sink into my brain. What sticks out is that most people do not understand what their own definition of enough is. What is enough? How much money is really enough? (That word if you say it over and over starts to sound weird) The question really goes deeper than the simplicity in which I have asked. I think it comes down to your perspective. What do you want out of life? Is it materialistic wealth or is it about your relationships and quality of life? As I got older, I did realize many things. First off, I realized you can work yourself to near death, make a bunch of money, but then you are too stressed and exhausted to enjoy it. Yes, I know that hard work pays off. I have been working since I was 12. However, being at the “top”, what does that look like to you? I will illustrate what that looks like for me. Being at the top for me is being there for my kids when they need me, having weekends to do things and make memories, having a consistent and stable income, and most importantly, saying yes to myself. You may be asking, what does it mean to say yes to yourself? Here is what I have learned. In the past, I was so busy taking care of everyone else’s needs that I forgot myself. You are a not a robot. You have to recharge your own batteries too. I would run myself mentally and physically into the ground and feel guilty about taking time for myself. That is completely backwards and wrong to do to yourself. If you don’t take care of you, you will not be healthy enough to take care of your loved ones. You are enough. Many of us go through life thinking we should be somewhere else in life, we need to change ourselves for others, and you know what? You don’t. Fine tuning behaviors is one thing, but putting your own interests aside and neglecting what you enjoy isn’t a good thing. We as humans are always trying to be something we are not. Who are you? What do you enjoy? We need to embrace our differences and other’s differences in order to be our unique individual selves. It is good to take in other perspectives because I believe by doing that, we are gaining insight and the next time we need to reach into ourselves and make a decision, we will have a new perspective. Don’t be afraid to voice your opinion. I know going against the grain isn’t easy, or popular, but by voicing your opinion and interjecting your uniqueness, you are bringing value to other’s lives. You are valuable, you can make a difference, you just have to believe you are worth more than you give yourself credit for. Keep shining bright. Your light will come through.

Family fun

I am not sure how to stress that memories are worth more than anything material you deem valuable on this Earth. Life happens when you are busy planning. You may let that sentence go past you, but, let it sink in. Life happens when you are busy planning. What does that mean exactly? I have been contemplating that since last night. I saw in a Christmas chick flick. It really is true though. We plan our lives away. We are always planning on the next thing. How about enjoying the moments you should be creating, or would be creating, if you would stop looking so far ahead. I get planning is important, but if it gets in the way of enjoying and taking in what is at the end of your nose, then it isn’t worth it.

The power of simplicity.

Life is so complicated isn’t it? Well, I believe we complicate our own lives. It is amazing how much most of us have going on. We are always on the go, doing something, taking someone somewhere, or just trying to stay busy. Why do we do this to ourselves? We overstimulate ourselves and then we do things like take drugs or drink to bring ourselves down, numb ourselves from all the stimulus around us. What if we just slowed down, unplugged from technology once in awhile, and just enjoyed the natural beauty around us? I really feel that if we did these things, we would bring our stress levels down and would begin to enjoy life. It’s worth a shot! Try it and see if you feel better. Simple is easy to enjoy. Who cares about material things. Material upkeep is just a distraction. Who cares what others think of you regarding appearances or your projected wealth. What matters is a real friend. Someone who likes you because of who you are, not what you can do for them or what you have is seemingly rare in this world of likes and dislikes on social media. We need to use technology as a tool, not a way of life. The internet isn’t real life. Get together with actual people who are in front of you, put your phone away, and focus on them. Now, that is living!

Only in the face of adversity…..

Only in the face of adversity do you see someone’s true colors. When something unfortunate or bad happens, who is with you? Those who are with you and come to your aid are the one’s you need to keep in your life. On the flip side of the coin, are you the person who stays and helps or are you the one who has better things to do than comfort a friend? Life is a strange beast. One moment you are smiling and the next you are on the verge of tears. The things that happen to us, good or bad, shape who we are. If you put your whole heart and soul into life, as if you have never been broken, you will get back 10 fold. It is not easy trusting others because most of us have had trust broken or have been used. However, my advice is, do it anyway. You will never ever find the one who is worth trusting if you don’t allow  yourself to be vulnerable. In the face of adversity you will discover the true friends, the ones who love you, the ones who are worth more than any mega millions lottery ticket. Money comes and goes, but, a true friend is priceless. That feeling you get when your whole body is flooded with feelings because someone has shown you their most beautiful true colors, is an amazing experience. I hope you find true friends in this world. It isn’t about social status, who likes your posts on social media, or compliments on pictures you post. It is about true love for one another. I really believe there is more good than bad people in this world and in my opinion, love will always prevail. Fill your soul with lovely thoughts and do good in this world. Be the change you wish to see. If you want to change the world, change yourself and you are done! Being a good example and just being there for someone is enough.  Make memories and have new experiences. Find the good in the bad and laugh often. Sometimes laughing can make you feel better even when you feel defeated. Allow someone to pick you up and allow yourself to be vulnerable. Amazing things happen out of one’s comfort zone. Come out from under your comfortable rock and allow yourself to experience real life.

It’s that time of year again!

The leaves are falling, the air is getting that crisp feel, and it’s time to get cooking! October is a favorite month of mine. Although, I can find something I like in every month. Canning is one of my favorite things to do. This time of year you can find such great soup making ingredients, such as, squash. I love squash! I was given a beautiful, huge squash from a friend’s garden. I feel so good about cooking with it because I know exactly where it came from. I love to experiment with spices. One of my problems is I go by taste, so I really don’t measure anything when it comes to creating dishes. Baking is a different story because there is a science to ingredients reacting with one another to create beautiful desserts. I hope you will be able to find this inspirational to experiment on your own.

Squash soup:

Start with any squash( I have combined different types such as butternut squash and cucurbita)

Bake them on 375 split in half, face down in about an inch of water. I salt my water a little bit with Himalayan Pink Salt. Bake for about 45 minutes or until the squash is tender.

Scrape the squash out and toss the meat into a blender. Add 2 cups of chicken bouillon water. I use the powder bouillon because it has a more flavorful impact on my dishes vs the cubes. I will add a bit more water to the mixture until I get the consistency I prefer. Make the consistency not too thin. It will thicken a little with the cream. The cream will add a great fat that will bring out the individual flavors you are about to add to the soup. Salt and fat are two components that can make or break a dish.

Blend well until creamy. Then take the mixture and put it in a large pot. Turn the burner to medium heat and add half and half. I added probably about a cup. Stir well. I did add about a 1/8-1/4 tsp of  cayenne pepper and a few twists of a grinder of black pepper. After the pepper additions, I sprinkled nutmeg until it had a full, unique flavor. Then I canned the soup in quart jars.

Remember, this is just a guide to get you cooking. Some squash is sweeter naturally than others. Taste your ingredients first and then decide how to use them. A friend of mine recommended a book called the Flavor Bible. I love that book. It is so helpful in pairing flavors, especially if you are not familiar with certain flavors.

What’s your outlet?

Everyone needs to have some sort of stress relieving outlet. What’s yours? I have recently spoken to many people about how they relieve their stress. One thing they all had in common was they had a hobby. The hobby had the same qualities among those I spoke to. That quality was they all loved and was interested in what they chose to spend their time doing. Some of the people tried many activities before realizing what activity stood out the most and that they liked the most. It is important to explore new things and ideas because you just never know what you will find interesting. It is kinda like seeing a shirt on a rack in the store and saying it’s ugly or not for you when it’s on the hanger. However, I have tried on some of those clothes and discovered it actually looked good on me and I purchased it. So, the moral of this story is to explore, even if you think you may not like it. You could not only discover something new about yourself, but you might be good at something you didn’t even want to give a try to. Enjoy your day!

I understand…………..

I write about positive mind frames and attitudes. Yes, that is a huge component for me staying even keel, I do recognize that sometimes, medical intervention is necessary. There are chemical imbalances in the body that can cause depression, anxiety, and other mind altering issues. If you feel like you are in the boat of needing medical help, get it. Depression is real. Suicide is real. If you know someone who needs help, encourage them to get it. Listen to them and be there for them. Be a true friend in their time of need. I understand how it feels to be down a deep dark hole. It is so hard to find the light when all you feel is sadness and hopelessness. I understand. This is why I am encouraging you to open up to someone you trust. Sometimes we need someone to give us a helping hand, a loving gesture, or just a listening ear. I hope this post has helped you.
